摘  要:1997~ 1999年在浙江安吉县进行了在常规施用有机肥和氮肥的基础上 ,配合施用磷钾硼肥对红竹笋营养品质效应的研究。结果表明 :N、NPK、NPKB处理与 CK比较均能显著提高红竹笋的游离氨基酸、还原糖和多酚类含量 ,各处理品质含量高低排列依次为 :NPKB>NPK>N>CK。蛋白质含量以 N处理最高 ,CK最低 ;脂肪含量恰与蛋白质相反。NPK与 NPKB处理对竹笋的维生素 C含量影响不明显。相关分析证明 ,竹笋的游离氨基酸、还原糖含量与笋体的 P、K、B关系显著 ;多酚类含量与笋体P、B关系显著 ;蛋白质含量与笋体 N关系极显著 ;脂肪含量与笋体WT5BZ]Field experiments were conducted to study the effects of phosphorus,potassium and boron fertilizers on the nutritive components of bamboo shoots.The results obtained showed that combined fertilization of B with P and K increased obviously the bamboo shoot amino acid,reduced sugar and multi phenol content,compared with the CK treatment.The treatment in order of content was NPKB>NPK>N>CK.The highest protein content was N treatment,while the content of the fat decreased accordingly.However,the opposite effects were found with N fertilization.Application of NPK and NPKB fertilizers had no significant effect on the content of Vatimin C in bamboo shoot. The results of correlational analysis showed that the content of free amino acids and reduction sugars had significant correlation with P.K.and B in bamboo shoots,particularly the multi phenol content had significant positive correlation with P the B;there was significant positive correlation between protein and N in bamboo shoots,but significant negative correlation between fat and N.
