摘 要:大田条件下研究了定额灌水与等氮量不同追氮时期对优质强筋小麦品种郑麦9023品质的影响。结果表明,定额灌水与等氮量不同追氮时期对面团流变学特性、蛋白质含量、硬度、沉降值、千粒重均存在明显影响。增加灌水量有助于改善面团流变学特性,蛋白质含量、千粒重、沉降值及容重均以灌拔节水(W1)最好。氮肥用量相同,与氮肥全部基施相比,基追比按4∶6情况下,面团流变学特性表现较好,蛋白质含量、沉降值以及千粒重均明显增加;孕穗期较拔节期追施,综合品质进一步改善。由此可知,拔节期或孕穗期追施氮肥对于进一步改善小麦品质具有重要作用。The effects of fixed irrigation quota and nitrogen topdressing at different stages on wheat quality of cultivar Zhengzhou 9023 were studied under field conditions. The results showed that both fixed irrigation and nitrogen topdressing stage significantly affected the rheological properties of dough, protein content, hardness, sedimentation and kernel weight. The rheological properties of dough could be improved by increasing irrigation; meanwhile, protein content, kernel weight, sedimentation and bulk density performed the best if irrigating at the jointing stage(Wz). When same dose of nitrogen fertilizer was applied, the rheological properties of dough could be improved if 60% of the total nitrogen were applied as topdressing; meanwhile, protein content, hardness, sedimentation and kernel weight was also obviously increased compared with total basal fertilization. Topdressing during the booting stage could improve the comprehensive quality further than during the jointing stage, indicating that nitrogen fertilizer during jointing or booting stage was crucial for improving wheat quality.
