摘  要:蛋白质和DNA在生命活动中起到重要的作用,蛋白质和DNA的定量分析是食品科学和分析化学中经常涉及的检测内容;建立高灵敏度、低检测限的荧光探针定量测定方法对于准确分析食物的营养成分等具有重要意义。综述多种染料二聚体作为荧光探针测定蛋白质和DNA的研究进展,介绍了染料二聚体的结构特性和荧光性质、作用机制以及测定时pH、温度和反应时间等因素的影响,并展望了染料二聚体的发展趋势和应用前景。Proteins and DNA play an important role in the life activities. The quantitative analysis of protein and DNA is a common analysis content in food science and analytical chemistry. So it is very important to find fluorescence probe with high sensitivity and low detection limit for the analysis of the nutritional content of food. The research progress of dye dimer as fluorescence probe to determine protein and DNA was summarized. The structure characters, fluorescence properties and the functional mechanism of dye dimer, and the influencing factors such as pH, temperature and time which affected the determination were presented. The prospect of the progress and application of dye dimer were also discussed.
