摘  要:以油酸甲酯和蔗糖为原料,十六烷基三甲基溴化铵为相转移催化剂,采用两步无溶剂法合成蔗糖多酯。以蔗糖多酯收率和酯化度为指标,考察反应时间、反应温度、催化剂用量、反应物摩尔比对蔗糖多酯合成效果的影响,用响应面法对蔗糖多酯的合成工艺条件进行优化。实验结果表明,蔗糖多酯最佳合成条件为:反应时间5.1 h,反应温度139.5℃,催化剂用量2.86%,油酸甲酯与蔗糖的摩尔比10∶1。在最佳条件下,蔗糖多酯收率达到86.20%,酯化度为6.69。Sucrose polyester (SPE) was synthesized by a two - step free - solvent method using methyl oleate and sucrose as raw materials, and using cetyl trimethylammonium bromide as phase transfer catalyst. The effects of reaction time, reaction temperature, dosage of catalyst and molar ratio of reactants on the yield and esterification degree of SPE were investigated, and the synthesis conditions of SPE were optimized by response surface methodology. The results showed that the optimal conditions were as follows: reaction time 5.1 h, reaction temperature 139.5 ℃, dosage of catalyst 2. 86% and molar ratio of methyl oleate to sucrose 10: 1. Under the optimal conditions, the yield and estefification degree of SPE were 86. 20% and 6. 69, respectively.
