摘 要:为深入了解四川主产烟区烤烟致香前体物质含量变化的规律,通过在凉山、攀枝花、宜宾三地设置田间试验,分析了2个主栽烤烟品种云烟85及云烟87初烤烟叶的总酚、烟碱、色素、石油醚提取物及有机酸等致香前体物质的含量。结果表明:烟叶总酚含量变化较大(27.2~39.7mg/g),其中,最高含量与最低含量均出现在攀枝花。除宜宾下部叶外,相同部位同一烟区云烟85的总酚含量略高于云烟87。烟叶有机酸含量为47.5~72.7mg/g。相同部位同一烟区品种间烟叶的有机酸含量除凉山州上部叶和宜宾中、下部叶外,均表现为云烟85>云烟87。烟叶烟碱含量为8.7~30.4mg/g。同一烟区上、中部叶的烟碱含量均表现云烟87高于云烟85。在质体色素含量方面,3个烟区烟叶叶绿素a含量介于0.136 3~0.778 6mg/g,同一烟区云烟85中、下部叶叶绿素含量a较云烟87为高;叶绿素b含量为0.095 7~0.770 2mg/g;类胡萝卜素含量为0.934 4~2.946 8mg/g。烟叶石油醚提取物含量为37.6~77.0mg/g,同一品种同一烟区不同部位烟叶的石油醚提取物含量均表现为上部叶>中部叶>下部叶,同一烟区同一部位品种间石油醚提取物含量除宜宾中下部叶外,均表现为云烟85>云烟87。综合分析,烟叶致香物质的含量受品种、地区以及部位等多重因素的影响,其变化随品种、地区的变化而变化,其中地区因素影响较大。In order to know the characteristics of aroma precursor content of flue-cured tobacco leaves in different areas of Sichuan province, field experiments of two varieties Yunyan 85 and Yunyan 87 were adopted to analyze the leaf content of main fragrant precursors in Liangshan, Panzhihua and Yibin. The result showed that, firstly, the total phenols content in tobacco leaf var- ied significantly from 27.2 mg/g to 39.7 mg/g,of which the highest and the lowest appeared both in Panzhihua. And its content in Yunyan 85 was slightly higher than that in Yunyan 87 from the same area and the same parts except for lower leaves from Yibin. Secondly,the organic acid con- tent varied between varieties ranging from 47.5 mg/g to 72.7 rag/g. Generally,Yunyan 85 had a higher accumulation than Yunyan 87 with an exception of upper leaves in Liangshan and middle and lower leaves in Yibin. Thirdly,the nicotine content of tobacco leaves changed according to va- rieties as well,which ranged from 8.7 mg/g to 30.4 mg/g. In upper and middle leaves, the nico- tine in Yunyan 87 were higher than that in Yunyan 85. Fourthly,the tobacco leaf content of chlo- rophyll a,chlorophyllb b and carotenoids ranging from 0. 136 3 mg/g to 0. 778 6 mg/g,0. 095 7 mg/g to 0. 770 2 mg/g and 0. 934 4 mg/g to 2. 946 8 mg/g,respectively. Finally,petroleum ether extraction contents of different leaf parts changed from 37.6 mg/g to 77.0 mg/g,ordered as fol- low. upper leaf^middle leaf^lower leaf. Yunyan 85 had a higher content of petroleum ether ex- tract except for middle and lower leaves in Yibin. In summary, the result indicated that the con- tent of aroma constituents of tobacco leaves was affected by multiple factors, such as varieties, ar- ea and position, especially regional factors.
