摘  要:水产品质量事关国计民生,对其严格控制势在必行。在短期利益驱使下,水产行业中违规使用孔雀石绿(MG)事件时有发生,目前已成为影响食品质量安全和国际市场竞争力的重要因素。因此,对水产品中MG及其代谢产物—隐色孔雀石绿(LMG)残留的检测日益重要。本文针对现有主要检测方法及发展趋势进行概要综述。介绍了液相色谱法(LC)和高效液相色谱法(HPLC)等色谱学联用技术在MG和LMG检测中的应用,指出电化学传感器、电化学生物传感器和拉曼光谱法等在MG残留量的检测方面,具有很好的研究价值和应用前景。The quality of the aquatic products should be paid great attention to, which is of great importance for national welfare and the people's livelihood. In order to seek short - term economic interest, malachite green (MG) is used illegally in some fish farming industries sporadically. The presence of MG and its primary metabolite leucomalachite green (LMG) in aquatic product has now became one of the most important factors that hurt the food safety and the international market competition capacity. Therefore, the concentration of the MG and LMG must be controlled strictly. In the paper the research progress of the method for determining MG and LMG was reviewed. The application of liquid chromatography, and high performance liquid chromatography for detecting MG and LMG were summarized. Meanwhile, the potential merit and application prospect of chemical sensors, biochemical sensors and raman spec-trometry were also presented.
