摘  要:为探明烘烤过程中烤烟烟叶中主要含氮化合物与烟叶烟气氨释放量的相互关系,对烘烤过程中烤烟烟叶烟气氨释放量与主要含氮化合物含量进行分析对比,结果表明:在烘烤过程中,总氮、总植物碱、蛋白质均下降且蛋白质减少最多;氨基酸含量在变黄后期和定色后期呈现出两个波峰;烟气氨释放量与烟叶含氮化合物中的氨基酸和硝酸根含量呈显著正相关,与蛋白质存在显著负相关;通过逐步回归分析,建立烟叶烟气氨释放量的回归方程Y=0.369785+0.194658X1-0.05609X2+0.091147X3(R=0.952,P<0.01),其中:X1为氨基酸含量,X2为蛋白质含量,X3为硝酸根含量。The correlation between the contents of main nitrogen compounds and flue gas ammonia emission of flue - cured tobacco leaves in the process of baking was analyzed. The results showed that : in the baking process, the contents of total nitrogen, total plant alkaloid and protein decreased, and the protein content reduced most; the amino acid content at late yellowing stage and late color fixation stage showed two peaks ; the flue gas ammonia emission had a significantly positive correlation with amino acid content and nitrate content in tobacco leaf, but had a significantly negative correlation with the protein content. Through stepwise regression analysis, the regression equation of flue gas ammonia emission was established as follows: Y = 0. 369785 + 0. 194658X1 -0. 05609X2 + 0. 091147X3 (R = 0. 952, P 〈 0. 01 ), in which : X1 was amino acid content, X2 was protein content, X3 was nitrate content.
