摘  要:引进无角陶塞特、波德代、萨福克种公羊,与当地河西蒙古羊、小尾寒羊进行杂交,以河西蒙古羊为对照,对6月龄杂交一代羊的肉品质和重金属、农药残留进行了检测研究。结果表明,其杂交一代羔羊生产的羊肉,肉色分值在3.50~3.80之间,肉色正常;大理石纹分值在3.15~3.86之间,表明肌间脂肪含量适中;肉品24h后的pH值在5.17~5.84之间,符合鲜肉标准;熟肉率在59.98%~60.92%之间,出品率较高,肉品失水率在18.22%~20.62%之间,保水性能突出;肌纤维直径短,在34.26nm~36.09nm之间,肌肉嫩度剪切力值小,在3.56kg~4.48kg之间,肉质柔嫩;肉品中重金属铅、砷、汞、镉含量分别为0.052 mg/kg、0.067mg/kg、0.000 58mg/kg和0.000 65mg/kg,肉品中六六六、滴滴涕的含量分别为0.014 8mg/kg和0.016mg/kg,符合国家无公害羊肉标准。引进优良肉羊品种,杂交改良本地河西蒙古羊和小尾寒羊,高效、健康养殖的肉羊,其肉品质良好,达到了安全、无公害羊肉要求。Poll Dorset,Borderdale, Suffolk male sheep were introduced and crossbred with local H exi Mongolia sheep and Small-tail Han sheep. Hexi sheep was as control group, mutton quality, heavy metal, pesticide of F1 reside were measured. The results showed that color value score of F1 was 3.50-3.80, the color is normal; marbling score was 3.15-3.86, intra- muscular fat content was moderate; pH24 h was 5.17-5.84, which met fresh meat standard; the rate of cooked meat was 59. 98% -60.92%, the yield was high; water loss rate was 18.22-20.62%, which showed excellent water holding capacity; the diameter of muscle fiber was 36.24-36.09 nm, Warner-Bratzler Shear Force was 3.56-4.48kg, the meat was tender. The contents of BHC and DDT were 0. 014 8 mg/kg and 0. 016 mg/kg, respectively, which accorded with national standard for pollution- free mutton. Therefore, good sheep breed was introduced to improve local He-xi Mongolia sheep and Small-tail Han sheep, which obtained high effect and healthy raising, mutton quality was good and reached the safe and pollution-free requirements.
