天山马鹿不同部位肌肉组织学特性研究

摘　　要：[目的]研究天山马鹿不同部位肌肉组织学性状对肉品质的影响。[方法]采用石蜡切片技术,对马鹿不同部位肌肉肌纤维直径、肌纤维密度、肌束内肌纤维根数和肌纤维密度进行测定。[结果]通过对不同部位肌肉组织学特性值进行综合比较发现,部位间肉质的比较为背最长肌>股外侧肌>冈上肌>臀中肌>肋间肌>臂头肌>腹直肌>胸浅前肌>颈斜方肌。[结论]结果为天山马鹿的养殖及鹿肉的开发和利用提供重要参考。[Objective] In order to study the muscle quality of different parts of Tianshan red deer.[Method] The muscle fiber diameter,density,number were measured with paraffin section.[Result] By the comprehensive analysis of the histological characteristics in different parts muscle of red deer,the muscle quality was LongissimusdorsiVastus lateralismuscle Supraspinatus Gluteus medius Intercostal muscle Triceps of arm muscle Rectus abdominisChest muscle Neck trapezius muscle.[Conclusion] The study will provide reference basis for breeding of Tianshan red deer and development and utilization of deer muscle.
