摘  要:重金属污染是影响食品安全的主要因素之一,为此需要对食品中重金属污染的来源、分布、危害、防治等进行深入研究.通过对众多重金属检测技术的分析与比较,结合我国现阶段重金属检测技术发展现状,重点研究了X射线荧光光谱检测技术,设计了新的重金属污染检测系统,并用实验方法进行了分析和论证.结果表明:利用文中的研究方法,可得到食品中的主要重金属污染及污染程度,为重金属污染检测和食品安全保护提供重要的参考依据.Heavy metals pollution is one of the most primary factors which effect on food safety. It is necessary for lucubrate various aspects about the pollution source, distribution, detriment, prevention and cure of heavy metals pollution in food. Numerous detection methods of heavy metals are analyzed and compared, also combined with the present situation of detection methods of heavy metals. The detection technique of X-ray fluorescence spectroscopy is focused on the research and the new heavy metals detection system is designed, which is also analyzed and demonstrated by experiments. The research results show that main heavy metals and pollution level in food can be given out completely by the research methods used in this article, which also provide important foundation to the detection of heaw metals oollution and the food safety orotection.
