摘 要:HB柚果实从幼小的子房发育为成熟果实的过程中,在果实体积增大的同时,果实内部也在发生相应的"质量"变化,其中主要是内含物质的变化。掌握果实大小生长与内含物质相应的动态规律,有利于制定优质丰产的栽培技术措施,提高产量和质量。通过研究HB柚果实含糖量、Vc、可溶性固形物和糖酸比的动态规律。结果表明:(1)HB柚果实大小(直径和高)生长和内含物质动态关系有如下规律:果实大小生长高峰期(早于)→重量生长高峰期(早于)→总糖积累高峰期。(2)HB柚果肉内有机酸的含量变化与果实大小生长、重量生长和总糖积累基本同步。HB柚果肉糖酸比有两次高峰;9月30日后果实糖酸比稍有下降,意味着HB柚果实成熟后延期采摘可能会稍增酸味。HB柚子的果实成熟期为9月30日~10月30日,此期间果实糖/酸比为13.2/1~9.0/1,果品风味纯正。(3)HB柚果肉中Vc含量动态表现出"单峰性"特点,即8月1日前Vc含量较高,此后逐渐减少。8月27日~10月30日主要转向果实成熟,Vc含量明显减少。(4)HB柚果肉可溶性固形物的积累特点是:①从幼果至成熟可溶性固形物逐渐提高;②增加最快的时间是8月16日和10月30日。HB柚果实可溶性固形物的积累与糖分的积累是同步的。During the development of ovary growing to fruit, the size of fruits increasing is bound to follow the fruit inclusions accumulating, which means some changes of fruit quality began at the same time as well. Understanding the relations between size growing and fruit inclusions accumulating of fruits can help us to make effective and practical technical managements to raise yield and quality of fruits. Because of this, the total sugar concentrations of pulp fruit, concentrations of Vc inside the pulp fruit, and the soluble solid concentrations, the ratio of total sugar concentrations/organic acid concentrations of Citrus maxima 'HB You' were studied. The results are as follows: 1)the size (diameter and height of fruit) growing and fruit inclusions accumulating show a law that the growth peak of size increasing was earlier than that of fruit weight growing, and than the growth peak of the total sugar accumulating was the latest; 2) Organic acid growing synchronized with growing of size, weight, and total sugar in inside the fruits of Citrus maxima 'HB You' . Besides, the ratio of total sugar concentrations / organic acid appeared two top points of time. After the time 30th Sept., the ratio of total sugar / organic aciddescending showed that the fruit would be sour to the taste some more when the ripe fruits were not collected in time. Because of this, the fruit mature period of Citrus maxima 'HB You' is considered to be from 30th Sept. to 30th Oct. with the ratio of sugar / acid = 13.2/1-9.0/1 that means fruits being good taste to us. 3) Vc growth curve having only one "single top point" indicates that the time of higher concentration was before the Aug.1, with following that was Vc descending after this time. Besides, the fruits come to being mature from Aug. 1 to Oct.30, and during this period Vc concentrations obviously dropping. 4)The characteristics of soluble solid concentrations inside the pulp fruit have two points: (1) Soluble solid concentrations gradually raised from y
