摘　　要：二十碳五烯酸(eicosapentaenioc acid,EPA)与二十二碳六烯酸(decosahexaenoic acid,DHA)是具有许多重要生理功能的ω-3系列多不饱和脂肪酸,二者对人体及动物具有重要作用,吸引越来越多研究者的关注。对EPA和DHA的基本性质、生理功能、来源、提取分离方法及应用现状进行综述,并对其研究前景进行展望。Both EPA and DHA are ω-3 fatty acids which have many important physiological functions. They are typically beneficial to human and animal, attracting more and more researchers＇ attention and getting many new research progress. This paper is a summary of the basic property, physiological function, the source, extraction and separation methods and application status of EPA and DHA, then discusses the prospect of the study.
