摘  要:研究酶电极生物传感器法测定冷却肉中的糖原含量。利用淀粉葡萄糖苷酶将糖原分解为葡萄糖,再用葡萄糖氧化酶电极生物传感器测定葡萄糖含量。结果表明:生物传感器在葡萄糖浓度0.5~20mg/mL范围内线性关系良好(R=0.9998);加样回收率为98.8%~101.2%,抗干扰性强;对肌糖原的检测与蒽酮比色法、酶解分析法相比较,差异不显著(P>0.05);且仪器重现性和稳定性较好。葡萄糖生物传感器用于肌糖原含量测定具有检测精度高、速度快、稳定性好、使用成本低等优势,有望成为检测冷却肉中肌糖原含量的新方法、新手段。The enzyme electrode biosensor method for glycogen detection was researched. The glycogen was decomposed to glucose by starch glucosidase, and then glucose was determined by glucose oxidase electrode biosensor. The method showed good lineadty, linear range was from 0.5 mg/mL to 20 mg/mL (the correlation coefficient R was 0.9999). Using this method, different extracts were measured and the average recoveries range from 98.8% to 101.2%. It proved to be a very useful method for testing large quantities of samples. Compared with the known methods, such as anthrone colorimetry and enzymatic analysis, this method is simple and rapid.
