摘　　要：以龙眼叶为材料,研究龙眼叶色素的理化性质,为各种食用品、化妆品、医药用品等色素新产品的生产提供重要原料。以65%酸性乙醇为提取剂室温浸泡24 h,用紫外分析法研究色素的稳定性。该色素水溶性良好在330 nm处有最大吸收峰,pH值对色素稳定性影响大,在碱性溶液中热稳定性差,食品添加剂、醋酸对色素有明显增色作用,耐光性好,氧化剂、还原剂中只有抗坏血酸对色素影响比较明显,除Fe3+和Pb2+外,金属离子对其影响较小。Longan leaves the material,physical and chemical properties research longan leaf pigment,an important raw material for the production of new products in a variety of food products,cosmetics,medical supplies pigment.As extraction agent soak for 24 hours at room temperature in 65% acidic ethanol.UV analysis method to study the stability of the pigment.Good water solubility of this dye has a maximum absorption peak at 330nm at the pH value on the stability of the pigment in the alkaline solution,the poor thermal stability,food additives,acetic significant hyperchromic effect on the pigment,good lightfastness,oxidants,reductants only ascorbic acid on the pigment obvious addition to Fe3＋ and Pb2＋ metal ion impact smaller.
