摘 要:以"津轻"和"丽江山荆子"的果实为试材,用反相高效液相色谱法和分光光度法测定绿原酸和总黄酮,并探讨果实生长发育中其含量差异和变化趋势。结果表明,苹果不同基因型绿原酸和总黄酮含量均有差异,野生型苹果"丽江山荆子"2种多酚含量均高于栽培型苹果"津轻"。2种苹果在生长发育过程中绿原酸含量变化趋势相同,果肉在果实发育初期含量高,发育中期绿原酸含量迅速降低,后期含量趋于平稳,果皮无变化;而总黄酮含量变化趋势不同,在"津轻"中随着果实的成熟膨大总黄酮含量降低,"丽江山荆子"中随着果实的成熟总黄酮含量无明显变化。苹果果实中绿原酸含量变化与果实膨大无直接关系,而总黄酮含量随着果实的膨大而下降。Tsugaru and Malus rocleii Schneid. were used as materials to analyze the contents and the varia- tion tendencies of chlorogenic acid and total flavonoids which were determined by the methods of RP- HPLC and spectrophotometric during the fruit growth and development. The results showed that different apple genotypes had different contents of chlorogenic acid and total flavonoids, the contents of both kinds of polyphenols in Malus rockii Schneid. were more than in Tsugaru. The change trends of chlorogenic acid in two apple cultivars are same. There are the highest contents of chlorogenic acid in pulp at the early stage, then getting down quickly in the middle stage and tending to be stable in the late stage, and the con- tents of chlorogenic acid in peel have no change in the whole growth period. But the change trends of total flavonoids in two apple cultivars are different, and total flavonoids are increased with fruit swelling in Tsu- garu, but there is no change in Malus rockii Schneid. The content of chlorogenic acid has no direct relation- ship with the swelling of fruit, but the content of total flavonoids will be descreased with the swelling of fruit.
