摘 要:为研究辐照和抗氧化剂处理对宠物干粮食品在储藏过程中脂肪氧化的影响,在牛肉中添加抗氧化剂(生育酚、抗坏血酸钠、叔丁基对苯二酚、没食子酸丙酯、茶多酚)制成宠物干粮食品,以60Coγ射线对宠物干粮食品进行辐照处理,研究储藏过程中辐照及未辐照样品中丙二醛含量的变化。结果表明:复合抗氧化剂处理(叔丁基对苯二酚+没食子酸丙酯+茶多酚)对样品中丙二醛的抑制效果优于其他几种复合抗氧化剂(没食子酸丙酯+茶多酚、叔丁基对苯二酚+没食子酸丙酯、叔丁基对苯二酚+茶多酚)和单一抗氧化剂处理;与对照相比,储藏100 d时叔丁基对苯二酚+没食子酸丙酯+茶多酚处理对丙二醛的抑制率为65.5%,辐照结合叔丁基对苯二酚+没食子酸丙酯+茶多酚处理对丙二醛的抑制率为64.4%。储藏初期,辐照处理样品中丙二醛含量明显高于未辐照处理,但随着储藏时间的延长,辐照处理样品中丙二醛含量的增加速度缓于未辐照处理,至储藏100 d时,辐照处理样品中丙二醛含量已经低于或接近未辐照处理。因此,辐照结合抗氧化剂的处理方式可以延缓货架期超过100 d的宠物干粮食品中丙二醛含量的增加。To study the effect of radiation and varieties of antioxidants on the fat oxidation of dried pet food, antioxidants such as tocopherol, sodium ascorbate, tert-Burylhydroquinone, propyl gallate and tea polyphenols were added into beef to produce the pet food undergoing 60Co γ radiation, MDA contents in the food irradiated and unirradiated during storage were measured. The results showed that the inhibitory effect of multi-antioxidant treatment(tert-Butylhydroquinone+propyl gallate+ tea polyphenols) against MDA was better than other compound antioxidant treatments or single antioxidant treatment. Compared with the control, the inhibition rate of muhi-antioxidant treatment( tert-Butylhydroquinone+propyl gallate+tea polyphenols) against MDA was 65.5% on day 100 of storage, and the inhibition rate of the above multiantioxidant treatment combining radiation was 64. 4%. At the beginning of storage, the contents of MDA in the irradiated samples were higher than those in unirradiated samples, but the increasing pace of MDA in the irradiated samples was slower overtime, as a result the contents in the irradiated samples at day 100 were less than or close to that in unirradiated samples. In con-clusion, radiation combining muhi-antioxidant treatment may delay the increase of MDA content in dried pet food for shelf life of more than 100 d.
