摘　　要：芝麻渣是水代法制备芝麻香油的副产物,干基含有40%～50%的蛋白质,10%以上的残油,因此具有较高的开发利用价值。文章总结了湿麻渣研究利用的现状,分析了当前研究中存在的问题,为湿麻渣的进一步研究和利用提供了参考和借鉴。Sesame dregs are the byproducts of sesame oil by water extraction process, containing 40%-50% of protein and more than 10% of residual oil in the dry basis, so there is a high value for developing and useing it. Summarize the status of study and use of wet sesame dregs, analyze the problems in the current study and provide a reference for the further research and use of wet sesame dregs.
