摘 要:麒麟鸡(即卷毛鸡)全身金黄色,羽毛翻卷、皮肤外露,散热性能好,是一种适合热带高温地区饲养的优质肉鸡。为了研究麒麟鸡的生长性能和肉用价值,本研究测定了其0-12周龄生长、屠宰性能及肉品质特性。结果表明:④生长性能:麒麟鸡第4、8、12周龄平均体重,公鸡分别为368.98g、963.21g、1598.01g,母鸡分别为340.76g、817.17g、1324:57g(P〈0.05);第4、8、12周龄料重比,公鸡分别为2.07、2.95、3.48,母鸡分别为2.05、2.79、3.59;②屠宰性能:麒麟鸡的屠体率、半净膛率、全净膛率、胸肌率、腿肌率、腹脂率、肌间脂肪宽和皮脂厚,公鸡分别为89.76%、81.54%、67.53%、7.82%、11.29%、2.42%、0.69cm、0.48cm,母鸡分别为89.78%、80.87%、62.94%、6.19%、9.92%、3.91%、0.78cm、0.61cm,部分性状差异显著(P〈0.05);⑧肉品质:麒麟鸡肌肉肉色、pH值和剪切力,公鸡胸肌分别为5.93、6.15、3.72kg,腿肌分别为6.18、6.54、3.41kg,母鸡胸肌分别为5.77、6.05、3.41kg,腿肌分别为6.03、6.21、2.74kg,公、母鸡胸肌肉品质与腿肌肉品质差异显著(P〈0.05)。In order to study the growth performance (Curly Chicken) , this experiment was the first time to and meat determinate quality of Kirin Chicken the growth performance, slaughter performance and meat quality characteristic of 12 weeks of the Curly Chicken,which was fed in Maoming city, the west of Guangdong Province. The results showed that: (1) as for the growth performance:the average weight of 4, 8, 12 week days Curly Chicken was significant differences (P〈0.05) , the cocks were 368.98g, 963.21g and 1598.01g, the hens were 340.76g, 817.17g and 1324.57g, moreover, the feed conversion ratio of 4, 8, 12 weeks Curly Chicken was different, the cocks were2.07, 2.95, 3.48, the hens were 2.05, 2.79, 3.59. (2) as for the slaughtering performance: carcass rate, half eviscerating rate, eviscerated rate, chest muscle rate, leg muscle rate, abdominal fat rate, intramuscular fat and thickness of subcutaneous fat was tested, the cocks were 89.76%, 81.54%, 67.53%, 7.82%, 11.29%, 2.42%, 0.69cm, 0.48cm, the hens were 89.78%, 80.87%, 62.94%, 6.19%, 9.92%, 3.91%, 0.78cm, 0.61era, part of the character was significant difference (P〈0.05) . (3) as for the meat quality: meat color, pH value and shear force of cock and hen was significant difference (P〈0.05) between chest muscle quality and leg muscle quality , the cocks chest muscle were 5.93, 6.15, 3.72 kg, leg muscle were 6.18, 6.54, 3.41 kg, the hens chest muscle were 5.77, 6.05, 3.41 kg, leg muscle were 6.03, 6.21, 2.74 kg. The Curly Chicken growth performance, slaughter performance and meat quality was higher than the same age of the other quality chicken, at the same time, the abdomen fat rate, intramuscular fat and thickness of quality chicken too, it need to reduce the fat content improve the meat quality.
