摘  要:清朝建立后,云南地区经历了初期的动乱,很快进入了长期的和平稳定发展时期。随着改土归流的进行,外来人口源源不断进入云南边疆民族地区,新的农作物品种也逐渐在边疆民族地区得到推广。这些都推动了清代云南地区社会经济的发展。晚清以后,西方资本主义入侵,云南边疆地区形势日渐复杂。这样的社会经济背景,不能不对云南饮食文化产生影响。同时,受复杂自然环境与丰富动植物资源的影响,云南各民族的经济生活及其文化具有明显的多样性与丰富性,云南的饮食文化由此体现出内容丰富及多姿多彩的特点,成为云南各族人民共有的宝贵文化财富。After the establishment of the Qing Dynasty,Yunnan region had experienced the turmoil of the early,and soon entered a long-term peaceful and stable development period.With the conduct of the Chieftain,the immigrant population poured into the Yunnan frontier regions,and new crop varieties have gradually been promoted in border ethnic areas.These all promote the social and economic development of Yunnan in Qing Dynasty.In late Qing Dynasty,the invasion of Western capitalism made the situation more complex in the border areas of Yunnan.With such a socioeconomic background,the impact on food culture definitely cannot be avoided.At the same time,due to the complexity of the natural environment and the impact of the rich animal and plant resources,the economic life and culture of different nationalities had shown their own diversity and richness.Thus,Yunnan food culture which reflects the rich and colorful features becomes the valuable cultural wealth of all the ethnic groups in Yunnan.
