摘 要:【目的】研究不同玉米自交系萌发期间淀粉分解酶类活性动态变化,为玉米种子淀粉生物转化提供理论依据。【方法】测定了4个玉米自交系萌发期间不同天数的4个淀粉分解酶α-淀粉酶,β-淀粉酶,淀粉磷酸化酶以及淀粉去分支酶的活性动态变化。【结果】除了β-淀粉酶以外,其他3种淀粉分解酶活力变化趋势大致相同,都在萌发第3天左右达到最大值,并且总淀粉酶的活性高于淀粉磷酸化酶和淀粉去分支酶活性。【结论】玉米加工行业,可以将萌发第3天的淀粉酶活性作为鉴定指标。[Objective] The objective of this study was to analyze the dynamic changes of starch degradation enzymes' activities in different maize inbred during germination, which provide the theoretical basis to the utilization of the starch degradation enzymes and increase of the additional value of starch. [Method] Four maize key inbred lines ( Huangzaosi, Mo17, 08-641, 18-599) were used as the experimental materials, the dynamic changes of 4 starch degradation enzymes (α- amylase, β-amylase, Starch phosphorylase, Starch debranching enzyme) were detected during germination. [Results] The results showed that the activity changes of 4 starch degradation en- zymes were similar with the exception of β-amylase, and the activities reached the maximum value on the third day of seed germination. The activities of amylase were higher than starch phosphorylase, starch debranching enzyme. [Conclusion] The amylase activities on the third day of seed germination may be used as a considerable index in the study of starch processing.
