摘  要:为了解江苏省目前生产上小麦的品质现状,本文以江苏省粮食局抽样统计资料为基础结合农业部抽样调查结果,对江苏省生产上小麦品质现状进行了分析,2006~2010年江苏省小麦质量等级按国家标准《小麦(GB1351—2008)》达到一等的仅为3.3%~29.8%,年度间差异较大;按优质小麦-强筋小麦(GBT17892—1999)和优质小麦-弱筋小麦(17893—1999)质量标准,达到国家认可的优质麦比例不足20.0%,小麦品质在品种、种植区域和年度间存在较大差异。通过对江苏省小麦品质与其他小麦生产省的比较,发现小麦容重、蛋白质含量和湿面筋含量等指标的变幅大于其他小麦生产省,说明江苏省生态条件和小麦类型多样。提出区域化种植、选用优质品种、采用调优栽培技术及产业化经营等提升江苏省小麦品质的策略。To understand the current status of the wheat quality in wheat production in Jiangsu province, data based on the investigation from Food Bureau of Jiangsu province and Ministry of Agriculture were analyzed in the paper. Only three point three percent to twenty-nine point eight percent wheat grains were classified into first class of grain quality ac- cording to the national standard for wheat ( GB1351--2008), with huge variations among years. Less than 20.0% wheat with high levels of strong gluten or weak gluten met the national standard for high quality wheat ( GB/T17892--1999 and GB/T17893--1999) in 2006-2010. Cuhivar, planting area and year were main factors affecting the wheat quality. Wheat quality between Jiangsu province and other important wheat production areas was compared inthe paper. The results showed that the variation of bulk density, protein content and gluten content in Jiangsu province were larger than those in other areas, which suggested that the higher diversity of wheat type and ecology type in Jiangsu province. Some strategies for impro- ving wheat quality in Jiangsu province were presented, such as reginonalized planting, application of high-quality wheat cuhivars, improvement of cultivation technique, and industrial management.
