摘 要:通过研究槲皮素抑制溶菌酶淀粉样纤维化及纤维的细胞毒性发现,槲皮素能够抑制溶菌酶的淀粉样纤维化,溶解成熟的溶菌酶纤维,将淀粉样纤维转化成为无定形沉积,抑制溶菌酶纤维导致的溶血作用.槲皮素的这种作用与槲皮素-蛋白间的疏水相互作用相关,而与槲皮素的抗氧化作用无关.In the present study the anti-amyloidogenic activity of quercetin has been investigated. The results showed that quercetin inhibited amyloid fibrillation of hen egg-white lysozyme and destabilized the preformed amyloid fibrils. Lysozyme fibrils were transformed into amorphous deposits upon treating the fi-brils with quercetin. As a consequence the β-sheet structure of the fibrils was disrupted and the fibrillar cy-totoxicity was attenuated. The anti-amyloidogenic effect of quercetin is not attributed to its anti-oxidative property but rather to its hydrophobic interaction with the fibrils.
