摘 要:麻醉剂能够使鱼体保持安静,降低应激反应,减少操作和运输过程中对鱼体的损伤。目前,国内对于麻醉剂在水产品中的使用管理尚不明确。本文概述了鱼类麻醉剂的种类和作用原理,麻醉剂对鱼体的毒性效果,麻醉剂的检测方法以及国际上对此开展的风险评估情况,并探讨了鱼类麻醉剂未来的研究方向,为鱼用麻醉剂的安全监管提供参考。Anesthetics are chemical or physical agents which can calm fish and cause them to lose their consciousness and mobility progressively, and finally reduce their stress reaction. In fisheries and aquaculture, anesthetics are useful for reducing stress caused by handling and transportation. However, management of anesthetics applied to fishery is in the fuzzy stage in the domestic market. In this paper, property and action principle of anesthetics MS -222 and clove oil were introduced. Effect of anesthetics on plasma cortisol and other physiological responses in fish, analysis method and risk assessment of anesthetics in fish were also discussed which can provide reference for the understand- ing of fish anesthetics research.
