摘 要:在对玉米淀粉进行非晶化处理的基础上,对其辛烯基琥珀酸酯化条件进行优化,并与原玉米淀粉的酯化进行对比,得出原淀粉辛烯基琥珀酸酯化的最佳反应条件为35℃、3h、pH=8.5、淀粉乳0.25g/mL、辛烯基琥珀酸酐加入量3%(占淀粉干基质量分数),所得产品的取代度为0.016 1,反应效率为67.47%;非晶颗粒态玉米淀粉酯化的最佳反应条件为40℃、3h、pH=8.0、淀粉乳0.25g/mL、辛烯基琥珀酸酐加入量3%(占淀粉干基质量分数),产物取代度为0.020 5,反应效率为85.94%。经过非晶化处理的玉米淀粉酯化反应的效率及产物的取代度都高于未经处理的玉米淀粉。The octenyl succinic anhydride modification was optimized and compared with that of the native corn starch based on decrystallization processing of corn starch. The results showed that the optimum reaction conditions of native corn starch are temperature of 35 ℃, reaction time of 3 h, pH of 8.5, starch slurry concentration of 0.25 g/mL, and OSA amount of 3% (mass percentage of dry starch). The substitution degree of the product is 0. 016 1, and the reaction efficiency is 67.47%. The optimum reaction conditions of non-crystal granular starch are temperature of 40 ℃, reaction time of 3 h, pH of 8.0, the starch slurry concentration of 0.25 g/mL, and the OSA amount of 3% (mass percentage of dry starch). The substitution degree of the product is 0. 020 5, and the reaction efficiency is up to 85.94%. Both the reaction efficiency and substitution degree of the esterification product of non-crystal granular corn starch are higher than that of the native corn starch.
