摘　　要：以真空预冷机在低温下快速冷却食品的控制过程为例,分析其系统结构和控制原理,采用小型PLC自制简易试验平台,完成了系统的安装与调试,实现了真空预冷机的PLC自动控制,节约了成本。为方便监控使用组态软件设计上位机,对果蔬真空预冷控制系统的技术应用具有推广意义。The structure and control principle of vacuum cooler were analyzed based on the operational process during which the food was cooled rapidly under low pressure. After installing and commissioning of the devices and all the sensors, the automatic control function of this system was achieved using PLC so as to save the general capital. In order to facilitate the operators, the upper computer was designed which is help of popularizing this technical application.
