摘 要:目的了解解放军某部伙食单位餐(饮)具消毒状况,防止因餐饮具不洁引起食源性疾病。方法对解放军某部2006~2010年伙食单位餐(饮)具消毒效果监测资料进行分析,采用大肠菌群纸片法检测各类餐(饮)具。结果 2006~2010年餐(饮)具合格率为86.9%,呈逐年升高趋势,差异有统计学意义(P﹤0.01);集体食堂合格率高于招待所、服务中心(P﹤0.01),碟、碗、刀合格率高于筷子、餐桌(P﹤0.01)。结论针对该部餐饮具消毒现状,重点加强小型规模单位餐饮具的消毒管理,强力推行餐(饮)具集中消毒,采取综合措施提高餐饮具消毒卫生质量。OBJECTIVE In order to guard against food resulting diseases caused by unclean dinner (cooking) sets, find out the sterilization status of them used by a certain PLA food unit. METHODS Analyzed the results data of sterilization test to dinner (cooking) sets used by a certain PLA food unit, 2006-2010. And tested various dinner (cooking) sets using E.coli paper piece method. RESULTS The qualification rate of the dinner (cooking) sets used during 2006-2010 was 86.9%, in- dicating a raising trend year by year. The differences had statistical significances (P 〈 0.01 ) ; the qualification rate of collec- tive dinning halls was higher than guest houses, service centers (P 〈 0.01), and the rates of dishes, bowls, knifes were higher than chopsticks, dinner tables (P 〈 0.01). CONCLUSION In view of the sterilization status of our unit's dinner (cooking) sets, we should highlight sterilization management to dinner (cooking) sets using in small units, strongly pursue concentrated sterilization of the sets, and take comprehensive measures to raise the sterilization quality of them.
