摘 要:研究了香菇[Lentinus edodes(Berk.)sing]808在液体培养时淀粉酶、羧甲基纤维素酶(CMC酶)、漆酶3种胞外酶酶活的变化,以及胞外蛋白质含量的变化。结果表明,淀粉酶酶活在培养第4天时出现高峰,CMC酶、漆酶酶活都在第13天达到最高值,说明香菇最先利用的物质是淀粉。胞外蛋白质含量的变化与总酶酶活变化基本相同。The activity changes of 3 extracellular enzymes, amylase, carboxymethyl cellulose enzyme (CMCase) and laccase, of Lentinus edodes (Berk.) Sing. cultivar 808 during liquid culture, as well as changes of extracellular protein content were study. The results showed that amylase activity reached the high peak on the 4th day; while highest activity of carboxymethyl cellulose enzyme and laccase was on the 13th day, revealing that L. edodes used starch firstly during liquid culture. The changing trend of protein content was similar with that of enzyme activetv.
