摘 要:选用应村乡、垵口乡、王村口和三仁乡等不同产地,不同竹龄(Ⅰ度~Ⅳ度)的竹材,在自制炭化窑中,按照特定的生产工艺,制备食用竹炭,测定其主要重金属含量。结果表明:(1)不同产地、不同竹龄和不同部位的竹材烧制食用竹炭的重金属含量各不相同,偏远山区、少施或不施化肥,以及Ⅱ度和Ⅲ度毛竹中梢部竹材更适合制备食用竹炭;(2)食用竹炭的生产工艺炭化温度为500~800℃,周期15 d左右;制得产品重金属铅(Pb)为0.16 mg·kg-1、砷(As)为0.09 mg·kg-1、汞(Hg)为0.01 mg·kg-1,符合GB 16740-1997《保健(功能)食品通用标准》要求。Bamboos (PhyUostachy heterocycla cv. pubescens )with different ages from the different areas (Yincun, Ankou, Wangcunkou and Sanren village ) were selected to burn edible bamboo charcoal in self made charring kiln, and their main heavy metal contents were measured. The results showed that the heavy metal contents were not identical for bamboo charcoals from different areas, with different ages and from different position of the bamboo. The 2 -3 growth cycle (3 -6 years old) bamboos from remote mountainous areas, fertilizing less or no chemicals during growth, were more suitable for the preparation of edible bamboo charcoal. The edible bamboo charcoal can be obtained at a carbonization temperature of 500 800 ℃ for a period of 15 d. The contents of heavy metals were lead (Pb) 0.16 mg·kg^-1, arsenic (As) 0.09 mg·kg^-1, mercury (Hg) 0.01 mg·kg^-1 respectively, in accordance with GB 16740-1997 "health (functional) requirements for food standard".
