摘  要:以较耐贮藏桃品种"秦王"和不耐贮藏桃品种"白丽"为试材,研究采后贮藏期间果实硬度、乙烯释放速率及α-甘露糖苷酶(α-man)活性的变化差异。结果表明,耐贮性较差的"白丽"果实在贮藏的第2天其乙烯释放和α-man活性便出现小高峰,此后在贮藏第4天出现乙烯释放峰值,到贮藏第5天伴随着α-man活性的迅速升高,果实硬度快速下降。耐贮藏的"秦王"果实乙烯释放和α-man活性峰值均出现在贮藏后第5天,然后下降,在贮藏末期又出现第2个峰值。此外,在整个贮藏期间,耐贮性较差的"白丽"果实α-man活性明显高于"秦王",在贮藏后期尤为显著。说明α-man活性高低可能显著影响桃果实的耐贮性。Peach cultivars "Qinwang" and "Baili" with different storage properties were used to inves- tigate the changes of fruit firmness, the rate of ethylene release and the activity of α-mannosidase(a man)after harvesting. The results showed that the poor storability fruits of "Baili" reached the first peak of ethylene release and α-man's activity on the second day. The maximum of ethylene release ap- peared on the 4th d. After that the firmness declined rapidly accompany with the fast increase of α- man's activity. While in the hardness fruits of "Qinwang", the maximum of ethylene release and α- man's activity appeared on the 5th d, then decreased afterward and to the second peak at the end of storage. In addition, the α-man's activity of "Baili" was higher than "Qinwang" during the whole sof- tening progress, especially at later stage, which indicated that the activity of α-man may significantly affect the peach fruit storability.
