摘 要:研究测定了鲁烟白猪及烟台黑猪的生长肥育性能、胴体性能及肉品质。结果表明:鲁烟白猪的生长性能和饲料报酬较高,与烟台黑猪相比,平均日增重提高15.69%(P<0.01),料重比降低23.91%(P<0.01);鲁烟白猪和烟台黑猪的胴体性能及肉质性状差异显著。其中,眼肌面积、后腿比例、骨骼率和瘦肉率都以鲁烟母猪较高,分别比烟台黑猪提高13.34%(P<0.05)、5.64%(P<0.01)、8.86%(P<0.05)、10.04%(P<0.01);肉色、a24、干物质及肌内脂肪含量都以烟台黑猪较高,分别比鲁烟白猪提高14.04%(P<0.05)、7.26%(P<0.05)、4.91%(P<0.05)、67.81%(P<0.05);滴水损失以烟台黑猪较低,比鲁烟白猪降低44.27%(P<0.01);剪切力以鲁烟白猪较低,比烟台黑猪降低20.11%(P<0.01)。背最长肌17种氨基酸含量两者差异显著。其中,氨基酸总量、鲜味氨基酸含量、必需氨基酸含量、必需氨基酸占总氨基酸的比例和棕榈酸含量都以烟台黑猪较高,分别比鲁烟白猪提高8.84%(P<0.01)、7.28%(P<0.01)、9.64%(P<0.01)、0.70%(P>0.05)、4.19%(P<0.01);鲜味氨基酸占总氨基酸的比例、亚油酸含量都以鲁烟白猪较高,分别比烟台黑猪提高1.45%(P<0.05)、32.09%(P<0.01)。The growth performance,carcass performance and meat qualities of LUYAN white pigs and YANTAI black pigs were studied.The results showed that the growth performance and FCR of LUYAN hog pigs were higher,ADG and FCR increased by 15.69 % (P <0.01) and 23.91% (P < 0.01) as compared with YANTAI black pigs.The carcass performance and meat qualities of LUYAN pigs and YANTAI black pigs were significant difference.Eye muscle area,ham percentage,bond percent and lean percent of LUYAN pigs were higher,increased by 13.34 % (P<0.05),5.64 % (P<0.01),8.86 % (P <0.05)and 10.04 % (P<0.01)as compared with YANTAI black pigs.Meat color score,a24,dry matter and IMF of YANTAI black pigs were higher,increased by 14.04 % (P < 0.05),7.26 % (P < 0.05),4.91% (<0.05),67.81% (P < 0.05) as compared with LUYAN white pigs.Drop loss of YANTAI black pigs was lower,induced by 44.27 % (P <0.01)as compared with LUYAN pigs,shear force of LUYAN pigs was lower,induced by 20.11% (P < 0.01) as compared with YANTAI black pigs.The contents of 17 amino acids of LUYAN pigs and YANTAI black pigs were significant difference.TAA,DAA,EAA,EAA/ TAA and palmitic acid of YANTAI black pigs were higher,increased by 8.84 % (P < 0.01),7.28 % (P < 0.01),9.64 % (P < 0.01),0.70 % (P > 0.05) and 4.19 % (P < 0.01) as compared with LUYAN pigs.DAA/TAA and linoleic acid of LUYAN pigs were higher,increased by 1.45 % (P<0.05)and 32.09 %(P<0.01)as compared with YANTAI black pigs.
