摘  要:主要对马铃薯加工淀粉废水提取蛋白进行水热酸水解法制备复合氨基酸的工艺条件进行了优化,并对水解产物尝试了离子交换树脂分离纯化研究。研究结果表明:在最佳水解条件下马铃薯蛋白水解度可达70%~73%,制备的复合氨基酸富含除色氨酸外其余所有人体必需氨基酸和半必需氨基酸,营养价值高。该技术研究为我国马铃薯行业发展具有积极意义。The present study aims at exploring the technology of synthesizing composite amino acid from potato starch processing wastewater by acid hydrolysis method. Optimize the potato protein acid hydrolysis process, study on the amino acid composition and content of potato protein hydrolysates, and use ion exchange adsorption as a means to separate and purify the amino acid from hydrothermal synthesized composite amino acid. The results confirmed that high potato protein hydrolysis degree could be reached (70%-73%) under the optimum hydrolysis conditions, and the as-prepared composite amino acid contains all the essential amino acids and the semi-essential amino acids for man except for tryptophan, which indicating a high nutritional value of the composite amino acid. The research has great significance for the development of potato industry in china.
