摘 要:用差示扫描量热法测定了两种抗冷性不同的水稻干胚极性脂及其六个主要组分的热致相变 .发现在 - 10~ 4 5℃范围内干胚极性脂中只有磷脂酰甘油 (PG)发生相变 ,同时较抗冷品种秀水号极性脂及PG的相变温度低于不抗冷品种广陆矮 4号对应的相变温度 ,从而推断非内囊体 PG决定水稻干胚膜脂相变及流动性 .用自旋标记物 12 NS对两种水稻干胚极性脂以及 PG的流动性进行比较 ,也得到相似结果 .这些结果表明 ,水稻抗冷性可能与干胚膜脂流动性有关 ,而后者的差异源于由脂肪酸饱和度不同引起的The thermal phase transition of polar lipid (PL) and its 6 main components from embryo of 2 rice varieties were tested by differential scanning calorimetry(DSC). Phase transition is found only in phosphatidylglycerols(PG) from the PL of rice embryo at -10—55 ℃。 And the phase transition temperature of PL and its PG from chilling resistant variety Xiu\|shui 27 is lower than that from chilling sensitive variety Guang\|lu\|ai 4. It implies that phase transition and fluidity of membrane lipids from rice embryo are determined by PG existing in non\|thylakoid membranes. The similar tendency is observed by electron spinning resonance using spin probe 12NS. It is concluded that chilling resistance of rice is probably related to the fluidity of membrane lipids from rice embryo while the fluidity difference of membrane lipid is caused by the difference of phase transition temperature due to fatty acid saturation of PG.
