摘  要:研究了绿头野鸭 (Anasplatyrhnchos)的屠体品质。结果表明 ,屠宰率 91 .7%,半净膛率 84.0 4 %,全净膛率 77.2 1 %,胸肉率、腿肉率、皮脂率分别为 2 0 .40 %、9.60 %、1 7.53%。公母绿头野鸭之间除皮脂率差异极显著外 ,其余指标差异均不显著。表型相关分析表明 ,绿头野鸭活重与胸腿肌重及皮脂率均呈显著的正相关 ,胸腿肌率与皮脂率呈显著负相关 ,活重与腹脂重呈中等正相关 。The carcass quality of mallard duck(Anas platyrhnchos) was measured. The results indicated that dressing percentage was 91.7%, percentage of eviscerated yield was 77.21%, percentage of breast muscle yield,percentage of leg muscle yield, skin fat ratio were 20.14%, 9.60% and 17.53%,respectively.No significant difference was found in other traits between the male and female except for skin fat rate.Correlation analyses showed that living weight had highly positive correlation with breast and leg muscle yield and skin fat ratio,the percentage of breast and leg muscle yield had highly negative correlation with the skin fat ratio.Living weight had moderately positive correlation with intra-abdominal fat,the percentage of breast muscle yield had low negative correlation with the percentage of leg muscle yield.
