摘　　要：对橘皮中精油、果胶、色素、膳食纤维等主要功能性成分的物理化学性质、提取工艺进行了综述,并对其综合应用进行了分析,展望了橘皮综合应用、开发前景.The physico-chemical properties of the essential oil, pigment, pectin, dietary fiber and other major functional components in the citrus peel as well as the process of extraction were summarized.The integrated applications of them were analyzed, and the comprehensive application and development pr- opect were predicted of orange peel.
