摘  要:目的测定九种燕窝中唾液酸含量,探索燕窝中唾液酸的范围值。方法利用燕窝中唾液酸与酸性茚三酮形成稳定的物质,在470nm处有最大吸收峰的特点进行测定。结果唾液酸浓度在0~70μg·ml。范围内与吸光度呈良好的线性关系,测得血燕、白燕、黄燕唾液酸百分含量分别为11.0367%,6.8100%,10.1733%,但UV—Vis法测得值比HPLC法稍低。结论该方法精密度良好,重复性良好,回收率满意,但操作步骤繁琐,燕窝中唾液酸含量测定方法需进一步改善。Objective To determine the content of sialic acid in nine kinds of edible bird's nest and study the scope of the content of sialic acid in edible bird's nest. Methods Sialic acid and acid ninhydrin could form a stable material with a maximum absorption peak characteristics in the 470 nm, which can be used to determinate the content of sialic acid. Results The concentration of sialic acid (0 -70 μg·ml^-1 ) had a good linear relationship with the absorbance. And the content of sialic acid in blood ,white ,yellow edible bird g nest were 11. 0367% ,6.8100% , 10. 1733 %. Also, the results that UV - Vis measured were lower than HPLC's. Conclusion The precision and repeatability of this method are good ; the recovery is satisfied. But the operation steps were complex. So the determination of content of sialic acid in edible bird's nest needs further study.
