摘  要:为探索贵州黑山羊肉质营养特性,将贵州黑山羊中心产区10只羊屠宰,测定肉用性能、肉质特性、常规营养成分和肌肉氨基酸含量,并建立贵州黑山羊生长的氨基酸模型。结果表明:贵州黑山羊平均屠宰率为46.12%,净肉率为33.56%;羊肉水分含量为72.50%,蛋白质含量为20.78%,矿物质含量丰富;肌肉干物质中必需氨基酸含量为258.91 mg/g,总氨基酸含量为703.74 mg/g;蛋白质中除色氨酸被水解破坏外,含有其他8种人体必需氨基酸,氨基酸组成与人体氨基酸需要模型非常接近,富含风味氨基酸,谷氨酸和天门冬氨酸含量达138.08 mg/g。贵州黑山羊生长的小肠可消化氨基酸模型:赖氨酸为100,苏氨酸为48,缬氨酸为52,异亮氨酸为53,亮氨酸为83,蛋氨酸为26,组氨酸为35,苯丙氨酸为50,精氨酸为127,色氨酸为14,蛋氨酸为26,苯丙氨酸+酪氨酸为91。To explore the meat nutritional properties of Guizhou black goat the 10 tested sheep from the center region of Guizhou black goat were slaughtered to determine the meat performance, meat properties, conventional nutritional components and amino acid contents of muscle, and then the amino acid model for the growth of Guizhou black goat was established. The results showed that the average slaughter rate and net meat percentage of Guizhou black goat were 46.12% and 33.56%, respectively; the moisture content and the protein content of mutton were 72. 50% and 20.78 % respectively, and the mineral content was rich; the contents of essential amino acids and total amino acids were 258.91 and 703.74 mg/g in the dry matter of muscle, respectively; In addition to hydrolysis damage of tryptophan, the protein contained other 8 kind of es- sential amino acids for human body, and its amino acid composition was very close to the demand model of amino acid of human body with rich flavor amino acid, and the contents of glutamate and aspartic acid were 138.08 mg/g. The digestible amino acid model to the small intestine for the growth of Guizhou black goat, consisted of lysine 100, threonine 48, valine 52, isoleucine 53, lcueine 83, methionine 26, histidine 35, phenylalanine 50, arginine 127, Trp 14, Met 26, and phenylalanine plus tyrosine 91.
