摘　　要：介绍了应用荧光光谱法和紫外-可见分光光度法研究食用合成着色剂与牛血清白蛋白(BSA)相互作用的进展.介绍了食用合成着色剂分子在蛋白质上的结合部位、结合数、结合常数和结合类型的基本理论和实验方法.简要讨论了本领域研究现状.An introduction on the progress of study of the interaction between edible colorants and BSA were presented. The theory and method of binding site, binding number, binding constants and binding type between them were introduced. And the status of this study was discussed.
