性别对安庆六白猪体尺性状、胴体性能及肉质性状的影响

摘　　要：选择体重90 kg左右的安庆六白猪80头,公猪去势(40头),母猪不去势(40头),研究了性别对猪体尺性状、胴体性能及肉品质的影响。结果表明:公猪组与母猪组相比,胸围和腹围分别提高了4.17%(P<0.05)和5.09%(P<0.05);剪切力提高了48.19%(P<0.01)。母猪组与公猪组相比,眼肌面积和瘦肉率分别提高了15.34%(P<0.01)和7.04%(P<0.01);平均背膘厚和脂率分别降低了10.07%(P<0.01)和7.18%(P<0.01)。性别对安庆六白猪体尺性状和肉质性状影响不明显,对胴体性能有显著的影响。80 Anqing Liubai pigs with 90 kg BW were chosen to study the effects of sex on body size traits, carcass performance and meat qualities. The results showed that the group of barrows compared with the group of sows, chest circumference and abdomen circumference increased by 4.17 % （ P 〈 0.05 ） and 5.09 % （ P 〈 0.05 ）, respectively, shear force increased by 48.19 % （ P 〈 0.01 ）. The group of sows compared with the group of barrows, eye muscle area and lean percentage increased by 15.34 % （P 〈 0. 01 ） and 7.04 % （ P 〈 0.01 ） , average fatback thickness and fat percentage decreased by 10.07 % （ P 〈 0.01 ） and 7.18 % （ P 〈 0.01 ）, respectively. The effects of sex on body size traits and meat qualities were not significant, and the effects of sex on carcass performance were significant.
