摘 要:目的探讨动物源性食物抗原与糖尿病的关系。方法选择糖尿病患者(糖尿病组)29例,其摄入动物源性食物(鱼、虾、牛奶和鸡蛋)后,采集血清。采用食物抗原包被ELISA法检测糖尿病组血清免疫球蛋白G(IgG)水平,ELISA法检测糖尿病组血清肿瘤坏死因子-α(TNF-α)、白细胞介素-1β(IL-1β)和干扰素-γ(IFN-γ)水平,并与正常对照组进行比较。结果 29例患者中,大量摄入虾的有4例(13.79%),大量摄入牛奶的有11例(37.93%),大量摄入鱼的有22例(75.86%),大量摄入鸡蛋的有19例(65.52%)。糖尿病组血清IgG、TNF-α、IL-1β和IFN-γ水平均较正常对照组显著升高(均P<0.05)。结论特异动物源性食物可引发体内炎性反应,炎性反应过程产生的炎性因子与糖尿病的发生存在密切关系。Objective To explore the relationship between animal derived food antigens and di- abetes. Methods Serum samples were collected from 29 diabetic patients with intake of common animal derived foods (fish,crayfish,milk and eggs). Serum IgG levels were detected using ELISA plates coated with food antigens. Moreover,serum TNF-α,IL-1β and IFN-γ levels were examined by ELISA. Results were compared between diabetic patients and normal controls. Results A- mong the 29 patients,large intake of crayfish in 4(13.79%) ,large intake of milk in 11(37.93% ), large intake of fish in 22(75.86%) ,and large intake of eggs in 19(65.52%). Compared with nor- mal control group,the levels of serum IgG,IL-1β,TNF-α and IFN-γ were significant higher in dia- betic group(all P〈0.05). Conclusion Specific animal derived foods may cause inflammatory re- sponse. The increase in inflammatory factors during inflammatory reaction is closely related to the occurrence of diabetes.
