摘  要:旅游饭店餐饮转向家宴经营,是饭店战略转型的突破口。家宴题材众多,转型经营大有可为。旅游饭店经营家宴在运作实践中要着力解决超计划用工、超规模生产、超常规备料、超精细订单、超灵活统筹等五大问题。Tourism catering is shifting to family restaurants, which are a key for the strategic transformation of tourism catering. Family-run catering services, with a variety of culinary resources at their disposal, have much room for further growth. Problems that need tackling during the course of their development include shorthanded issues, limited preparation competence, disadvantaged logistics, inability to handle over-detailed orders and lack of flexible coordination.
