摘 要:目的:测定地黄加工及模拟加工过程中pH的变化和梓醇的含量变化。方法:利用pH计测定地黄加工及模拟加工过程中的pH值变化,HPLC法测定梓醇含量的变化。结果:地黄加工过程及模拟加工过程中pH值呈不断下降趋势,不同温度加工条件下梓醇含量不同,梓醇含量在模拟加工最初阶段呈明显下降趋势。结论:温度在地黄加工过程中导致细胞中核膜和液泡膜的破裂致使β-葡萄糖苷酶和梓醇相遇以及不断下降的酸性环境导致了梓醇含量下降,而模拟加工条件下证明地黄中可以酶解梓醇的β-葡萄糖苷酶在低温条件下活性强,而高温灭活。Objective:To determine the change of pH and the contents of catalpol during the process and the simulated process of Rehmannia glutinosa liboseh. Methods:Use pH -meter to determine the density of H ~ and use HPLC to determine the contents of catalpol. Results : The density of H ~ had been demonstrated that it had a decreased tendency during the process and simulated process. The contents of catalpol were different un- der different processes, and were decreased obviously at the initial stage under simulated process. Conclusion: The caryotheca and tonoplast in cell may rhegmaed under process, accordingly, glucosidase meets catalpol and makes it degradated, it is obvious that the glucosidase is more active at low temperature from the reseach in simulated process of Rehmannia glutinosa libosch, while the H^+ may has an effect on the degradation of catal- pol at the later stage of process.
