摘 要:目的:优选咖啡渣中脂肪酸的提取工艺。方法:以提取物中总脂肪酸的得率为指标,通过正交试验法优化脂肪酸的提取工艺参数。结果:最佳提取工艺为8倍量的丙酮提取3次,每次3 h,所得脂肪酸得率为17.06%。结论:优选的工艺提取效率高、结果稳定,为咖啡渣中脂肪酸类成分的工业化生产提供参考。Objective: To optimize the best of fatty acids extraction methods from coffee residue. Methods: The best extraction method was investigated using the yields of total fatty acids and optimized through orthogonal test design. Results: The conditions with highest fatty acids yield were obtained as follows: the extraction solvent was acetone, the ratio of material-solvent was set 18 (m/v), extracting for 3 times with 3 hour each time. Under these conditions the yield of total fatty acids can reach 17. 06% (g/g). Conclusion: The optimized extraction method was high efficiency and stable, can provide some reference for the industrialization of fatty acids in coffee residue.
