摘  要:为探明喷施硼和硒对油桃采后生理及贮藏的效应,以北京地区主栽油桃品种红珊瑚为试材,对红珊瑚进行硼、硒和硼加硒喷施处理,分析了在(10±2)℃、(2±1)℃冷藏条件下和模拟货架期间红珊瑚果肉中影响细胞膜性能的几种因子,并测定了贮藏期间果肉硬度。结果表明:各处理均能提高红珊瑚贮藏期间谷胱甘肽过氧化物酶(GSH-Px)的活性,降低脂氧合酶(LOX)活性、丙二醛(MDA)含量、超氧阴离子(O-2·)生成速率、细胞膜透性,减缓果实硬度下降速度。结论:硒、硼加硒处理可有效延缓因活性氧引起的果实衰老,红珊瑚果实在(2±1)℃冷藏条件下更耐贮藏。To elucidate the effects of boron and selenium treatment on postharvest physiology and storage of nectarine fruit,hongshanhuof nectarine fruit were used as the materials in the experiment, which were sprayed with boron,selenium and boron mixed with selenium.Several factors affecting the cell membrane performance were analyzed under storage temperatures of (10 ± 2 )℃ and (2 ± 1 )℃, and simulated shelf life.The flesh hardness was also determined.The results showed that B,Se and B+Se treatments could all improve the activities of GSH-Px,decrease cell ion leakage,MDA accumulation ,the activities of LOX and the dynamics of the generation rate of O-2 · .Conclution:Se and B+Se treatments could effectively delay fruit senescence caused by reactive oxygen,(2 ± 1 )℃ was the most suitable for nectarine fruit storage.
