摘  要:不同品种的玉米醇溶蛋白含量不同,玉米胚乳中疏水性的醇溶蛋白与淀粉颗粒以结合体的形式存在,醇溶蛋白在瘤胃环境中是不可溶解的,相关研究已表明醇溶蛋白与反刍动物的消化率和泌乳奶牛的产奶量呈负相关关系、、而本研究参考了Larson and Hoffinan(2008)提出的改进的比浊法来测定8种不同品种玉米醇溶蛋白的含量,试验结果表明,不同品种玉米醇溶蛋白的含量不同,测得8个品种的玉米醇溶蛋白含量范围为3.09%~6.04%,该方法的专属性及稳定性好.通过用比浊法对玉米醇溶蛋白含量的测定,为玉米质量控制提供一定的数据基础,也为反刍动物日粮配置确定了一种便捷、快速。The zein content of different kinds of gorn grains is different. The combination of starch, prolamins and other proteins (albumins, globulins, glutelins) in corn endosperm is often referred to the starch-protein matrix. What's more, prolamin-zein is not soluble in water (hydrophobic) nor soluble in soluents normal to the innate rumen environment. Many research have demonstrated that there was a negative relationship between zein content and starch digestibility in ruminants. In the trial, the modified Turbidimetric Method (Larson and Hoffman,2008) to determine the zein content in 8 kinds of corn grains was proposed. The result had shown that zein content in 8 kinds of corn grains ranged from 3.10% to 6.04%. The specificity and stability of this method is very good. This method would provide data basis for maize quality monitoring. It would be widely used in laboratory for the preparation of the diet, because of the characteristics of convenient, fast and accurate.
