摘  要:文章研究了九种交配组合鳢肉质常规营养指标,为选育出优质高产的鳢提供参考。九种交配组合来源于乌鳢、斑鳢及杂交鳢[斑鳢(♀)×乌鳢(♂)]彼此之间交配繁殖的F1代,其中G1代表斑鳢(♀)×斑鳢(♂)的F1代,G2代表斑鳢(♀)×乌鳢(♂)的F1代,G3代表斑鳢(♀)×杂交鳢(♂)的F1代,G4代表乌鳢(♀)×斑鳢(♂)的F1代,G5代表乌鳢(♀)×乌鳢(♂)的F1代,G6代表乌鳢(♀)×杂交鳢(♂)的F1代,G7代表杂交鳢(♀)×斑鳢(♂)的F1代,G8代表杂交鳢(♀)×乌鳢(♂)的F1代,G9代表杂交鳢(♀)×杂交鳢(♂)的F1代。背部肌肉水分以G5含量最高,但与其他各组的差异不显著。灰分含量以G2最高,也与其他各组差异不显著。粗蛋白含量则以G1为最高,且与除G4、G5外的其他组差异显著。粗脂肪含量以G2、G3、G6、G7较高,且显著高于其他组。鲜味氨基酸以G1最高,且与除G2外的其他组差异显著。总氨基酸含量G1最高,且显著高于G3、G5、G6、G7、G9,与其他各组差异不显著。必需氨基酸的含量以G4最高,显著高于其他各组。半必需氨基酸也是G4的含量最高,显著高于除G1外的其他各组。G1、G2、G4、G9这四组的氨基酸评分(AAS)、化学评分(CS)、必需氨基酸指数(EAAI)均高于其他各组,其中以G4最高。饱和脂肪酸(∑SFA)和单不饱和脂肪酸(∑MUFA)均以G2最高,除G3组(∑SFA)外,G2显著高于其他组。多不饱和脂肪酸(∑PUFA)是G1含量最高。本试验的研究结果表明,G2和G4都有一定的"杂种优势",尤其是G2在大部分指标上优势明显,适宜作为主要养殖品种进行大面积推广。In this study, digestive of nine groups snakehead were investigated, which was expected to provide information for selecting high quality and reproduction hybrid snakehead species. The nine mating group came from the crossbred F1 interbreeding among Channa argus, C. maculate and hybrid snakehead, which was designated hereby as G1 [C. maculate(♀)×C. maculate( ♂)], G2[C. maculate( ♀)×C. argus( ♂ )], G3[C. maeulate ( ♀)×hybrid snakehead( ♂ )], G4[C .argus( ♀)×C. maculate( ♂ )], G5 [C. argus ( ♀)×C. argus(♂)], G6 [C. argus ( ♀)×hybrid snakehead( ♂)], G7 (hybrid snakehead( ♀)×C. maculate(♂)], G8 [hybrid snakehead( ♀)×C. argus( ♂ )]and G9 [hybrid snakehead( ♀)xhybrid snakehead(♂)]. The con- tent of muscle moisture was found to be highest on the back of G5, but showed no significant differ- ence with other groups. The content of crude ash was highest in G2 while no significant difference was detected with other groups. The content of crude protein was significantly higher in G1 than other groups except G4 and G5. The contents of crude fat were significantly higher in G2, G3, G6 and G7than other groups. The contents of flavor amino acids were significantly higher in G1 than other groups except for G2. The contents of total ami- no acids were also sinificantly higher in G1 than other groups except for G3, G5, G6, G7 and G9. The group of G4 had highest value of essential amino acid, which showed significant differencesfatty other with acid( groups. The group of G4 had highest semi-dispensable acid, G1 and significant differences with anyother groups. The results showed that both saturatedfatty acid( ∑ SFA)and monounsaturated fatty acid (∑ MUFA) contents were significantly highest in G2,while the content of polyunsaturated fatty acid (∑PUFA) was highest in GI. In conclusion, the results obtained from this study do strongly indicate that heterosis is more obvious in G2 and G4, especiallyin
