摘 要:目的以海带中存在的两种重要成分海藻酸和碘为原料,研究制备二者复合物的方法,以期获得较稳定的含碘产品。方法利用海藻酸钠碱溶酸沉的性质,分别制备海藻酸-碘复合物和乙酰化海藻酸-碘复合物的系列样品,并检测样品的紫外-可见吸收特性、碘含量和热稳定性。结果海藻酸和乙酰化海藻酸均能与碘生成复合物,复合物一般在590 nm有最大吸收峰;乙酰化海藻酸-碘复合物系列样品的碘含量明显高于海藻酸-碘复合物系列样品,且样品碘含量随乙酰化程度增加而增大;乙酰化海藻酸-碘复合物样品的热稳定性优于海藻酸-碘复合物样品。结论本研究建立了一种海藻酸-碘复合物的制备方法,工艺简单、成本低廉,可以此作为富碘食品进一步研发。Objective To explore the preparation method of alginate-iodine complex using the two important ingredients in Laminariajaponica Aresch as materials, to obtain a stable iodine product. Methods A series of alginateiodine complexes and acetyled alginate-iodine complexes samples were prepared utilizing the nature of sodium alginate, which dissolves in alkali and precipitates in acid. UV-vis absorbance characteristics, the content of iodine in the samples and the stability of the samples were determined. Results Both non-acetylated and acetylated alginate can form complexes with iodine, which have maximum absorbance at 590 nm. The iodine content of acetyled alginateiodine complexes was higher than that of alginate-iodine complexes, and the iodine content increased with the degree of acetylation; the thermal stability of acetyled alginate-iodine complex was higher than that of alginate-iodine complex. Conclusion This method is simple and low cost, and can be used for the development of new food for iodine supplement.
