摘  要:采用微波消解-电感耦合等离子体原子发射光谱法比较了有机和常规栽培的黑芝麻中的矿质元素。结果表明:两种黑芝麻均含有Al、Ba、Ca、Cr、Cu、Fe、K、Mg、Mn、Na、P、Sr、Zn、Si、Ti等15种较为丰富的矿质元素,但其含量差异显著(α=0.05),有机黑芝麻中除了Mn含量低于普通黑芝麻外,其它主要矿质元素优势明显,含量较后者高出0.2~5.6倍;两种黑芝麻中均未检出有害重金属As、Cd和Pb。通过分析矿质元素含量的差异,可为食品的品质和安全性的评价提供科学的参考依据。Comparative analysis of mineral elements in organic and traditional black sesame had been done by ICP-AES with microwave digestion.The results showed that the two kinds of black sesame were both rich in 15kinds of mineral elements:Al,Ba,Ca,Cr,Cu,Fe,K,Mg,Mn,Na,P,Sr,Zn,Si and Ti.However,the contents of these elements showed significant difference(α=0.05)between the two kinds of black sesame.The contents of all the mineral nutrient elements except Mn in organic black sesame were generally higher by 0.2~5.6times than those in the traditional one.And the harmful heavy metals As,Cd and Pb were not picked out.The difference in the contents of mineral elements determined by this method provided a scientific reference for the food quality and safety evaluation.
