摘 要:【目的】建立烤烟烘烤过程中烟叶颜色参数与含水量和化学成分关系模型,以控制烟叶烘烤过程中的物质变化和水分散失,为优化密集烘烤工艺和提高烟叶质量特色提供参考。【方法】以烤烟NC89上部叶为试验材料,采用河南农业大学设计的电热式温湿度自控密集烤烟箱,按照烤烟"三段式烘烤工艺"进行烘烤,研究烘烤过程中烟叶亮度值(L)、红度值(a)、黄度值(b)、色相角(H°)、色泽比(H)、饱和度(C)和色差值(ΔE)的变化规律及其与烟叶主要化学成分和含水量的关系。【结果】烘烤过程中,烟叶正面与背面各颜色参数的变化规律基本一致,且各颜色参数均在开烤至42℃末时变化剧烈,42℃之后变化幅度减小。相关分析表明,烘烤过程中烟叶内的主要化学成分与各颜色参数之间具有良好的相关性,其中叶绿素、类胡萝卜素、淀粉和蛋白质含量与各颜色参数间相关性较好,且大部分呈显著或极显著相关,而类胡萝卜素/叶绿素、含水量与其相关性略差。烘烤过程中烟叶叶绿素、类胡萝卜素、淀粉和蛋白质含量预测的平均相对误差分别为8.67%,8.71%,8.27%和1.47%,各模型预测精度均较高,而类胡萝卜素/叶绿素和含水量模型预测精度略差。【结论】通过色差计量化分析密集烘烤过程中的烟叶颜色参数,可以快速、准确预测烟叶主要化学成分的变化,实现烟叶烘烤过程中化学成分的实时监测。[Objective] This study established colorimetry based model for chemical components of fluecured tobacco leaves to optimize the bulk curing technology and improve the quality and characteristics of tobacco. [Method] Taking upper leaves of NC89 as experimental materials, changes of color indexes such as L, a, b, H°, H, C and △e and their relationship with chemical components and moisture content of flue- cured tobacco leaves during curing were studied using the "three-stage curing technology" based electricheated temperature flue-curing barn designed and made by Henan Agricultural University. [Result] The color indexes of front and back of tobacco leaves changed similarly during curing with dramatic changes from the start to the end of 42 ℃ and small changes after 42 ℃. Correlation analysis showed good correla- tion between chemical components and color indexes. Contents of chlorophyll, carotenoids, starch and protein were significantly or highly significantly related to color indexes, while chlorophyll/carotenoids and moisture content were slightly poorly related to color indexes. The average relative errors between meas- ured and predicted contents of chlorophyll, carotenoids, starch and protein were 8.67 %, 8.71 %,8.27 % and 1. 47% during curing,indicating high accuracy. But accuracy on prediction of chlorophyll/carotenoids and moisture content was slightly poorer. [Conclusion] The changes of chemical components could be predicted quickly and accurately by analyzing color indexes using color difference meter. Thus, it could realize realtime monitoring of chemical components of tobacco leaves during bulk curing.
