摘 要:以邛崃山脉4个茶叶产区3个品种为材料,取春稍1芽2叶制成蒸青样和炒青样进行生化成份分析.结果表明邛崃山脉茶叶受地质大环境控制的生化成份变化幅度小,由西北至东南是呈线性关系.水浸出物、茶多酚、儿茶素总量、酯型儿茶素和非酯型儿茶素由西北至东南是呈线性递增关系;而氨基酸和CAF由西北自东南是呈线性递减关系.线性方程的常数作为茶叶生化成份的标准值具有科学性,既可作为制定茶叶标准的依据,也可作为邛崃山脉茶叶地理标志保护产品的生化指标.地质背景、生态环境、品种和制作工艺都会影响茶叶的生化成份,从而影响茶叶的品质.Including of 4 tea producing areas and 3 cultivars as materials in the Mount Qiongla, Taking the spring slightly 1 bud 2 leaves made of steamed green and roasted samples as biochemical analysis. The results show that the biochemical composition of Mount Qionglai tea changes in a small controlled by the geological environmental , Which mostly run from northwest to southeast is linear distribution. The water extract, tea polyphenols, catechins, ester type catechins and non ester catechin from northwest to southeast is linear increasing relation; and the amino acid and CAF from northwest from southeast is linearly descending relation. Constant linear equation as the biochemical components of tea standard value is scientific, not only can be used as a basis for making tea standards, but also can be used as a biochemical index of Qionglai mountain tea geographical indications protection producls. The geological background, ecological environment, varieties and production process will affect the biochemical components of tea, thus affecting the quality of tea.
