摘　　要：论述了硝酸盐对人体的危害 ,人体硝酸盐来源及主要城市蔬菜硝酸盐污染现状。分析了影响蔬菜硝酸盐累积的内外因素 ;针对国内蔬菜硝酸盐污染普遍严重的现状 ,提出了降低蔬菜硝酸盐污染的措施。The harm of nitrate to human being and the source from where human being absorb nitare were discussed.The status of vegetable nitrate contamination of Tianjin and other cities was analysed.The paper discussed the factors affecting nitrate accumulation in vegetables and proposed some countermeasures to solve the vegetable nitrate pollution problem in China.
